Garlic Herb Chicken with Mashed Potatoes and Glazed Carrots

A heartwarming blend of garlic herb chicken, creamy mashed potatoes, and sweet glazed carrots. Perfect for family dinners!

Ingredients

  • 4 boneless, skinless chicken breasts
  • 4 cloves of garlic, minced
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 tablespoon butter
  • 4 large russet potatoes, peeled and cubed
  • 1/2 cup milk
  • 4 tablespoons butter
  • 1 pound carrots, peeled and sliced into coins
  • 2 tablespoons butter
  • 2 tablespoons honey

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Mix the minced garlic with the chopped thyme and rosemary, drizzle in olive oil, and season with salt and pepper.
  3. Rub the garlic herb mixture generously over both sides of the chicken breasts.
  4. Heat a large ovenproof skillet over medium-high heat, add the butter, and sear the chicken for 3-4 minutes on each side.
  5. Transfer the skillet to the preheated oven and bake for 15-20 minutes or until the chicken reaches 165°F (75°C).
  6. Boil a large pot of salted water and add cubed potatoes, cooking until tender, approximately 15-20 minutes.
  7. Drain the potatoes, return them to the pot, and mash with milk, butter, and seasoning.
  8. Sauté sliced carrots in a medium skillet with butter over medium heat for 5-6 minutes.
  9. Drizzle the sautéed carrots with honey, season with salt and pepper, and cook until glazed and tender, about 3-4 minutes.

Notes

For creamy mashed potatoes, use warm milk and let butter melt directly into the potatoes.
