Crispy and flavorful Garlic Parmesan Drumsticks, paired with tender baby potatoes for a comfort food experience.

  • 8 chicken drumsticks
  • 1.5 lbs baby potatoes, halved
  • 1 cup grated parmesan cheese
  • 1 cup panko breadcrumbs
  • 6 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • 1/3 cup olive oil
  • 2 teaspoons Italian seasoning
  • 1 teaspoon paprika
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken drumsticks dry with paper towels and season them generously with salt and pepper.
  3. Toss the halved baby potatoes with 2 tablespoons of olive oil, along with salt and pepper.
  4. Combine the grated parmesan cheese, panko breadcrumbs, minced garlic, chopped parsley, chopped basil, Italian seasoning, and paprika in a shallow bowl. Mix well until evenly distributed.
  5. Brush each drumstick with the remaining olive oil, then press firmly into the parmesan breadcrumb mixture, ensuring all sides are well coated.
  6. Place the coated drumsticks on top of the potatoes in the baking dish, arranging them evenly.
  7. Bake in the preheated oven for 40-45 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the coating is golden and crispy.
  8. Remove from the oven and let rest for 5 minutes. Garnish with additional fresh basil or parsley if desired, and serve hot with the roasted potatoes.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to a month.
