A comforting dish featuring crispy garlic Parmesan pork chops paired with creamy, cheesy scalloped potatoes.

Ingredients

  • 4 bone-in pork chops
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon dried Italian herbs
  • 8 cloves garlic, minced
  • 4 large russet potatoes, thinly sliced
  • 1 cup heavy cream
  • 1/2 teaspoon paprika (optional)
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons unsalted butter, diced

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Whisk together the heavy cream, minced garlic, salt, pepper, and paprika in a bowl.
  3. Layer half of the sliced potatoes in a greased baking dish, pour half of the cream mixture over them, and sprinkle with half of the cheddar and Parmesan cheese.
  4. Repeat the layers with the remaining potatoes, cream mixture, and cheese, dotting with butter on top.
  5. Bake covered with aluminum foil for 30 minutes.
  6. Heat olive oil in a skillet over medium-high heat.
  7. Season the pork chops with salt, pepper, and Italian herbs, and sear them in the hot oil for 4-5 minutes on each side.
  8. Add minced garlic to the skillet and continue cooking until the pork is golden brown and reaches an internal temperature of 145°F (63°C).
  9. Let the pork chops rest for a few minutes after cooking.
  10. Remove the foil from the baking dish and bake the potatoes for an additional 15 minutes until golden and bubbly.
  11. Serve the pork chops alongside the scalloped potatoes and enjoy!

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven or microwave.
