A delightful side dish featuring roasted sweet potatoes infused with garlic and parmesan, perfect for any autumn gathering.

Ingredients

  • 2 lbs sweet potatoes, peeled and cut into uniform 1-inch cubes
  • 2 tbsp extra virgin olive oil
  • 1 tsp kosher salt
  • 0.5 tsp black pepper, freshly cracked
  • 3 cloves garlic, minced
  • 0.5 cup parmesan cheese, freshly grated
  • 2 tbsp fresh parsley, finely chopped

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss the sweet potatoes with olive oil, salt, and pepper in a large bowl.
  3. Mince the garlic cloves in a small bowl.
