A vibrant mix of roasted vegetables seasoned with garlic and herbs, perfect as a side dish.

Ingredients

  • 1 head of broccoli, chopped into bite-sized pieces
  • 1 head of cauliflower, chopped into bite-sized pieces
  • 2 carrots, peeled and sliced
  • 1 bell pepper (any color), chopped
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon your choice of aromatic herbs (rosemary, thyme, or Italian seasoning)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Chop the broccoli, cauliflower, carrots, and bell peppers into bite-sized pieces.
  3. Mix the chopped vegetables with olive oil, minced garlic, and aromatic herbs until evenly coated.
  4. Spread the seasoned vegetables in a single layer on a baking sheet.
  5. Roast in the oven for 20-25 minutes, stirring halfway through.
  6. Serve warm as a delightful side dish.

Notes

Avoid overcrowding the baking sheet to ensure vegetables roast properly. Feel free to substitute with other seasonal vegetables.
