A healthy twist on a classic dessert, these delightful gelatin cubes are low in calories and can be customized with your favorite fruit juices.

Ingredients

  • 4 cups fruit juice (cranberry, orange, or mixed berry)
  • 4 tablespoons unflavored gelatin powder
  • 2 tablespoons honey or stevia
  • 1 cup cold water
  • 2 tablespoons fresh lemon juice
  • Optional: fresh mint leaves for garnish

Instructions

  1. Pour 1 cup of cold water into a medium bowl and sprinkle the gelatin powder evenly over the surface. Let it sit for 5 minutes to bloom until it becomes thick and spongy.
  2. In a saucepan over medium heat, warm the fruit juice until hot but not boiling. Add sweetener and lemon juice, stirring until completely dissolved. Remove from heat.
  3. Add the bloomed gelatin to the hot juice mixture and whisk continuously until the gelatin completely dissolves and the mixture is smooth.
  4. Pour the mixture into a 9×13 inch baking dish. Let it cool to room temperature for 30 minutes, then transfer to the refrigerator.
  5. Refrigerate for at least 4 hours or overnight until completely firm.
  6. Cut into 1-inch cubes using a sharp knife dipped in warm water. Store in an airtight container.
