Deliciously sweet and fluffy beignet squares, perfect for breakfast or dessert, glazed while warm for a gooey finish.

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup buttermilk
  • 1 large egg
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • Oil for frying
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons milk (for glaze)
  • 1 teaspoon vanilla extract (for glaze)

Instructions

  1. Mix the dry ingredients in a large bowl: flour, sugar, baking powder, baking soda, and salt.
  2. Whisk together the wet ingredients in another bowl: buttermilk, egg, melted butter, and vanilla extract.
  3. Combine the wet and dry ingredients, mixing gently until just combined.
  4. Heat oil in a deep fryer or large pot to 350°F (175°C).
  5. Roll out the dough on a floured surface to about 1/2-inch thick and cut into squares.
  6. Fry the beignet squares in hot oil until golden brown, about 2-3 minutes per side.
  7. Drain the fried beignets on paper towels to soak up excess oil.
  8. Prepare the glaze by whisking together powdered sugar, milk, and vanilla extract.
  9. Glaze each warm beignet square and serve immediately.
