Deliciously crispy on the outside and fluffy on the inside, these golden herb roasted baby potatoes are a perfect comfort food that elevates any meal.

Ingredients

  • 1 pound baby potatoes
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to a warm 400°F (200°C).
  2. Wash the baby potatoes under cold water and halve them.
  3. Combine the halved potatoes with olive oil, garlic, dill, parsley, salt, and pepper in a large mixing bowl.
  4. Spread the coated potatoes out in a single layer on a baking sheet.
  5. Roast the potatoes for about 25-30 minutes, flipping halfway through.

Notes
