A nostalgic and comforting casserole combining creamy pasta, seasoned beef, and bubbling cheese.

  • 1 pound ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 (15-ounce) can diced tomatoes
  • 1 (10.5-ounce) can condensed cream of mushroom soup
  • 1.5 cups uncooked elbow macaroni
  • 2 cups beef broth
  • 1 teaspoon Italian seasoning
  • Salt, to taste
  • Pepper, to taste
  • 1.5 cups shredded cheddar cheese
  • 0.5 cup grated Parmesan cheese (optional for topping before serving)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, add the ground beef, diced onion, and minced garlic.
  3. Cook until the beef is browned, about 5-7 minutes.
  4. Stir in the diced tomatoes, condensed cream of mushroom soup, uncooked elbow macaroni, and beef broth.
  5. Sprinkle in the Italian seasoning, salt, and pepper. Mix well.
  6. Bring the mixture to a simmer and cook for about 5 minutes.
  7. Carefully transfer the mixture into a greased 9×13-inch baking dish.
  8. Sprinkle the shredded cheddar cheese evenly over the top.
  9. Place the dish in the preheated oven and bake for 25 minutes.
  10. Remove from the oven and let cool for a few minutes before serving.

Notes

This casserole can be stored in the refrigerator for up to 3-4 days, and it freezes well for up to 3 months.
