Delightful Greek Chicken Bowls with marinated chicken, fresh veggies, and creamy tzatziki sauce for a burst of Mediterranean flavors.

Ingredients

  • Chicken breast
  • Olive oil
  • Garlic
  • Lemon juice
  • Salt
  • Black pepper
  • Cucumbers
  • Tomatoes
  • Red onion
  • Feta cheese
  • Cooked rice or quinoa
  • Greek yogurt
  • Dill
  • Water

Instructions

  1. Marinate the chicken breast in olive oil, minced garlic, lemon juice, salt, and pepper for at least 30 minutes.
  2. Grill or bake the chicken until cooked through.
  3. Prepare the tzatziki sauce by mixing Greek yogurt, diced cucumbers, minced garlic, dill, and water.
  4. Chop the fresh veggies (tomatoes, red onion) and prepare rice or quinoa as a base.
  5. Assemble the bowls by placing rice/quinoa at the bottom, topping with sliced chicken, fresh veggies, and crumbled feta cheese.
  6. Drizzle with tzatziki sauce and serve immediately.

Notes

Marinate the chicken longer for extra flavor. Feel free to prep veggies ahead of time.
