A vibrant and flavorful Greek Chicken Tzatziki Bowl, perfect for a wholesome dinner that brings the taste of summer to your table.

Ingredients

  • 4 Chicken breasts
  • 2 tablespoons Olive oil
  • 3 cloves Garlic, minced
  • Juice of 1 Lemon
  • 1 Cucumber, diced
  • 1 cup Greek yogurt
  • 2 tablespoons Fresh dill, chopped
  • Salt, to taste
  • Pepper, to taste
  • 1 cup Cherry tomatoes, halved
  • 1 Red onion, thinly sliced
  • 2 Bell peppers, mixed colors, sliced
  • 1 cup Feta cheese, crumbled
  • 2 cups Cooked rice or quinoa

Instructions

  1. Marinate the chicken in a bowl with olive oil, garlic, lemon juice, salt, and pepper for at least 30 minutes.
  2. Grill the chicken for about 6-7 minutes per side or until fully cooked with grill marks.
  3. Prepare the tzatziki by mixing Greek yogurt, diced cucumber, dill, salt, and pepper in a bowl.
  4. Assemble your bowls by starting with a base of cooked rice or quinoa.
  5. Load the bowls with sliced grilled chicken, cherry tomatoes, bell peppers, and red onion.
  6. Finish with a generous drizzle of tzatziki sauce over the top.

Notes

Marinating the chicken overnight will enhance the flavors. Serve with a side of Greek salad or pita bread.
