Juicy and flavorful burgers infused with Mediterranean essence, made easily in a pressure cooker.

Ingredients

  • 1 pound ground chicken
  • 1/4 cup red onion, diced
  • 3 cloves garlic, minced
  • 1/4 cup sun-dried tomatoes, finely chopped
  • 1 cup baby spinach, loosely packed, roughly chopped
  • 1 tablespoon fresh dill, chopped
  • 2 teaspoons dried oregano
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 2 tablespoons extra virgin olive oil, for cooking

Instructions

  1. In a large bowl, combine the ground chicken, diced red onion, minced garlic, and chopped sun-dried tomatoes.
  2. Incorporate the roughly chopped baby spinach, fresh dill, dried oregano, kosher salt, and black pepper into the chicken mixture.
  3. With your hands, divide the mixture into four equal portions and shape each into a patty.
  4. Turn your pressure cooker to the sauté setting. Add the extra virgin olive oil and let it heat until shimmering.
  5. Carefully place the patties in the hot cooker, cooking them for about 2-3 minutes on each side.
  6. Once the patties are browned, add 1/2 cup of water to the pot, then secure the lid and cook on high pressure for 8 minutes.
  7. Once the timer goes off, carefully perform a quick release of pressure, remove the burgers, and let them rest for a minute.

Notes

For extra flavor, marinate your chicken mixture for 30 minutes before cooking. Customize by adding feta cheese or olives.
