Deliciously marinated chicken kabobs bursting with Mediterranean flavors, perfect for grilling and sharing with loved ones.

Ingredients

  • 1.5 lbs boneless skinless chicken breast, cut into 1.5-inch cubes
  • 3 tablespoons olive oil
  • 3 tablespoons fresh lemon juice
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 cup cherry tomatoes
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1/2 cup Kalamata olives
  • Salt and black pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Make the Marinade: In a large bowl, whisk together olive oil, fresh lemon juice, minced garlic, dried oregano, dried thyme, salt, and black pepper until well combined.
  2. Marinate the Chicken: Add chicken cubes to the marinade, tossing to coat thoroughly. Cover and refrigerate for at least 20 minutes (or up to 8 hours).
  3. Prepare the Vegetables: While the chicken marinates, cut the bell peppers into bite-sized chunks and soak wooden skewers in water for 20 minutes (if using wooden skewers).
  4. Assemble the Skewers: Once marinated, thread the chicken cubes onto the skewers, alternating with cherry tomatoes, bell peppers, and Kalamata olives.
  5. Grill the Kabobs: Preheat your grill to medium-high heat. Grill the kabobs for 12-15 minutes, turning every 3-4 minutes, until the chicken reaches an internal temperature of 165°F.
  6. Let Them Rest: Once grilled to perfection, remove the kabobs from the grill and let them rest for 3-5 minutes.
  7. Garnish and Serve: Garnish the kabobs with freshly chopped parsley and serve them warm alongside tzatziki sauce and warm pita bread.

Notes

For maximum flavor, aim to marinate the chicken for several hours. Soaking wooden skewers prevents them from burning on the grill.
