A simple yet flavorful Greek chicken dish marinated in zesty lemon and topped with feta and olives, perfect for family dinners.

  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 cup crumbled feta cheese
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/4 cup fresh parsley, chopped
  • Lemon wedges for serving

Instructions

  1. Prepare the marinade by mixing olive oil, lemon juice, oregano, garlic powder, onion powder, salt, and pepper in a bowl.
  2. Add the chicken breasts and coat them in the marinade, then cover and refrigerate for at least 30 minutes.
  3. Preheat the oven to 400°F (200°C) and let the chicken come to room temperature.
  4. Sear the marinated chicken in a skillet over medium-high heat for 3-4 minutes on each side.
  5. Add feta cheese and olives to the chicken in the skillet.
  6. Bake in the oven for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  7. Garnish with parsley and serve hot with lemon wedges.

Notes

For maximum flavor, marinate the chicken earlier in the day or overnight. Substitute Kalamata olives with any good quality brined olives if needed.
