Delicious and nutritious Greek lentil meatballs paired with homemade tzatziki sauce.

Ingredients

Scale
  • 1 cup cooked lentils
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped onion
  • 2 cloves garlic, minced
  • 1/4 cup chopped parsley
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 egg (or flax egg for vegan option)
  • Olive oil for frying
  • Tzatziki sauce for serving

Instructions

  1. Combine Ingredients: In a large bowl, combine cooked lentils, breadcrumbs, onion, garlic, parsley, oregano, salt, black pepper, and egg. Mix until well combined.
  2. Form Meatballs: Form the mixture into small balls—about the size of a golf ball works well.
  3. Heat Olive Oil: Heat olive oil in a skillet over medium heat, allowing it to warm up and prepare for frying.
  4. Cook Until Golden: Cook the lentil meatballs in the skillet until they are golden brown and crispy on the outside, about 5-7 minutes per side.
  5. Serve & Enjoy!: Serve your delightful lentil meatballs with a generous dollop of homemade tzatziki sauce and enjoy every bite!

Notes

For a vegan option, substitute the egg with a flax egg. These meatballs can also be baked at 400°F (200°C) for 20-25 minutes.
