A vibrant and colorful Greek Pasta Salad bursting with fresh flavors of vegetables, olives, and feta cheese, perfect for summer gatherings.

  • 8 ounces pasta (such as rotini or penne)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, diced
  • 1/2 cup Kalamata olives, pitted and halved
  • 1 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Begin by cooking the pasta according to package instructions. Once it’s al dente, drain it and rinse under cold water to halt the cooking process and cool it down.
  2. Combine the cooled pasta, halved cherry tomatoes, diced cucumber, diced red onion, halved Kalamata olives, and crumbled feta cheese in a large bowl.
  3. Whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper until nicely blended.
  4. Pour the dressing over the salad and gently toss to combine all the ingredients.
  5. Chill the salad in the refrigerator for at least 30 minutes before serving.

Notes

Rinse the pasta thoroughly to prevent it from sticking together. Customize the salad with additional ingredients like bell peppers or spinach.
