  • 1 bell pepper, diced
  • 1 packet taco seasoning
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 4 large tortillas
  • Sour cream, for serving
  • Salsa, for serving

Instructions

  1. Brown the beef in a large skillet over medium heat until browned. Drain excess fat.
  2. Sauté the chopped onion and bell pepper until softened.
  3. Incorporate the taco seasoning, black beans, and corn; cook for an additional 5 minutes.
  4. Mix in the shredded cheese and remove from heat.
