Ingredients

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (10 oz) enchilada sauce
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can corn, drained
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 10 corn tortillas
  • Salt and pepper to taste
  • Optional toppings: sour cream, green onions, cilantro

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Sauté the ground beef, onion, and garlic in a skillet over medium heat until browned.
  3. Stir in the enchilada sauce, black beans, corn, and season with salt and pepper.
  4. Layer corn tortillas, meat mixture, and cheese in a baking dish.
  5. Bake for 25-30 minutes or until the cheese is bubbly and golden brown.
  6. Let the casserole cool for a few minutes before serving.
  7. Serve warm with optional toppings.

Notes

For a lighter version, use lean ground beef or substitute with turkey. You can make it vegetarian by replacing meat with additional beans or lentils.
