A comforting and nostalgic dish featuring green bell peppers stuffed with a savory mix of ground beef, rice, and cheese.

  • 4 large green bell peppers
  • 1 pound ground beef
  • 1 cup cooked white rice
  • 1 cup diced tomatoes (canned or fresh)
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C) to ensure it’s hot and ready for your peppers.
  2. Cut the tops off the green bell peppers and remove the seeds and membranes. Place them upright in a roasting pan or baking dish.
  3. Heat the olive oil in a skillet over medium heat. Add the chopped onion and garlic, sautéing until translucent, about 3-4 minutes.
  4. Add the ground beef to the skillet, breaking it up with a spoon. Cook until browned and no longer pink, about 5-7 minutes.
  5. Stir in the cooked rice, diced tomatoes, salt, black pepper, and Italian seasoning. Mix well and remove from heat.
  6. Spoon the beef and rice mixture evenly into each bell pepper. Top each pepper with shredded cheese.
  7. Pour a small amount of water into the bottom of the roasting pan. Cover the pan with foil.
  8. Bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 10 minutes or until cheese is melted and bubbly.
  9. Allow to cool slightly before serving.

Notes

Leftover stuffed peppers can be stored in an airtight container in the fridge for up to 3 days, or frozen for up to 3 months.
