Ingredients

Scale
  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups cooked white rice
  • 1 cup shredded carrots
  • 1 cup shredded purple cabbage
  • 1 avocado, sliced
  • 2 green onions, sliced
  • 1/4 cup chopped cilantro
  • 1/2 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha
  • 1 teaspoon honey
  • 1 teaspoon rice vinegar

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add in the diced onion and minced garlic, cooking until softened and fragrant, about 3 minutes.
  3. Add the ground turkey to the skillet, breaking it apart with a spoon. Cook until it’s no longer pink, about 6 to 8 minutes.
  4. Sprinkle chili powder, ground cumin, smoked paprika, salt, and black pepper over the turkey. Stir well until all the spices are evenly coated.
  5. While the turkey is cooking, whisk together the mayonnaise, sweet chili sauce, sriracha, honey, and rice vinegar in a small bowl to create the Bang Bang sauce.
  6. Divide the cooked rice among four bowls, creating a cozy bed for your toppings.
  7. Top the rice with the seasoned ground turkey, then layer on the shredded carrots, purple cabbage, and sliced avocado.
  8. Generously drizzle each bowl with the Bang Bang sauce to enhance the flavors.
  9. Finish with a sprinkle of sliced green onions and chopped cilantro before serving.
