A comforting and versatile hash made with ground turkey and sweet potatoes, perfect for breakfast, lunch, or dinner.

Ingredients

  • 1 pound ground turkey
  • 2 medium sweet potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 teaspoons olive oil
  • Salt and pepper to taste
  • Optional: chopped green onions or parsley for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped onion and diced bell pepper. Sauté for about 5 minutes until softened and aromatic.
  3. Stir in the minced garlic and cook for another minute.
  4. Push the sautéed vegetables to the side of the skillet and add the ground turkey, breaking it up as it cooks until browned and fully cooked through.
  5. Mix in the diced sweet potatoes. Cover and cook for about 10-15 minutes, stirring occasionally.
  6. Season with salt and pepper to taste.
  7. Garnish with chopped green onions or parsley before serving.

Notes

Great for breakfast topped with an egg or as a quick weeknight meal. Stores well in the fridge for up to 3 days.
