A healthy and delicious twist on classic tacos, featuring ground turkey, black beans, corn, and vibrant toppings.

  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 cup cooked rice
  • 1 cup black beans, rinsed and drained
  • 1 cup corn kernels
  • 1 cup diced tomatoes
  • 1 avocado, diced
  • 1 cup shredded cheese
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced onion and minced garlic to the skillet, and sauté until softened and fragrant, about 3-4 minutes.
  3. Brown the ground turkey in the skillet until it’s cooked through, about 6-8 minutes.
  4. Combine the taco seasoning with a splash of water, stirring into the turkey mixture to simmer for a few minutes.
  5. Layer the cooked rice, savory turkey mixture, black beans, corn, and diced tomatoes in serving bowls.
  6. Top with diced avocado, shredded cheese, and fresh cilantro.
  7. Serve the bowls with lime wedges on the side.

Notes

Customize each bowl with your preferred toppings; leftover turkey mixture can be stored in the fridge for up to 3 days.
