Hash Brown Egg Nests

Crispy potato nests filled with baked eggs, cheese, and crumbled bacon, perfect for a hearty breakfast.

  • 3 cups shredded hash browns
  • 4 strips bacon, cooked and crumbled
  • 6 large eggs
  • 1 cup shredded cheddar cheese
  • 2 tablespoons chopped fresh chives
  • Salt and black pepper to taste
  • Cooking spray or oil for greasing

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Grease a 6-cup muffin tin with cooking spray or oil.
  3. Prepare the hash browns by thawing if frozen and squeezing out excess moisture.
  4. Shape the nests by dividing the hash browns among the muffin cups and pressing them firmly into shape.
  5. Add crumbled bacon and half of the shredded cheese to each nest, seasoning with salt and pepper.
  6. Bake for 15 minutes until golden and crispy.
  7. Crack one egg into each nest and season with salt and pepper.
  8. Bake again for 15-20 minutes, adding the remaining cheese during the last 2 minutes.
  9. Cool for 2-3 minutes before removing them from the tin.
  10. Garnish with chopped chives and serve immediately.

Notes

For added crispiness, make sure to squeeze out as much moisture from the hash browns as possible. You can also customize with different add-ins.
