A nutritious and delicious bowl featuring tender chicken, caramelized sweet potatoes, and fresh vegetables.

Ingredients

  • 4 skinless chicken breasts
  • 2 sweet potatoes
  • 2 bell peppers
  • 1 cup broccoli
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt to taste
  • Pepper to taste
  • Fresh cilantro for garnish
  • Fresh parsley for garnish
  • Avocado (optional)
  • Lime (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Peel and dice the sweet potatoes into uniform cubes.
  3. Toss the sweet potatoes with olive oil, salt, and spices.
  4. Spread the sweet potato cubes on a baking sheet and roast for 25-30 minutes.
  5. Season the chicken breasts with salt, pepper, and spices.
  6. Heat olive oil in a skillet over medium heat and cook the chicken for 6-7 minutes on each side.
  7. Add vegetables to the skillet and sauté for 5-7 minutes until tender-crisp.
  8. Assemble the bowls with roasted sweet potatoes, sliced chicken, and sautéed vegetables, garnished with fresh herbs.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently with a splash of water.
