Delicious and healthy banana muffins made with Greek yogurt for added moisture and protein, perfect for a quick breakfast or snack.

Ingredients

  • 2 ripe bananas
  • 1 cup Greek yogurt
  • 1/4 cup honey
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • Optional: chocolate chips or nuts

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mash the ripe bananas until smooth.
  3. Mix in the Greek yogurt, honey, egg, and vanilla extract until combined.
  4. Combine dry ingredients: flour, baking soda, and salt in a separate bowl.
  5. Merge the dry ingredients into the banana mixture carefully.
  6. Add optional chocolate chips or nuts if desired.
  7. Fill muffin cups about 2/3 full with batter.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Cool in the pan for 5 minutes, then transfer to a wire rack.

Notes

Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months.
