Fluffy and wholesome oatmeal pancakes that offer a guilt-free breakfast option packed with fiber and protein.

Ingredients

  • 1 cup rolled oats
  • 1 cup milk (or non-dairy alternative)
  • 1 large egg
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • Butter or oil for cooking

Instructions

  1. Blend oats and milk until smooth.
  2. Add in the egg, honey (or maple syrup), baking powder, salt, and vanilla; mix until combined.
  3. Heat a non-stick skillet over medium heat and grease with butter or oil.
  4. Pour pancake batter onto the skillet, using about 1/4 cup for each pancake.
  5. Cook for 2-3 minutes or until bubbles appear on the surface.
  6. Flip and cook for an additional 2-3 minutes until golden brown.
  7. Serve warm with syrup and butter, or fresh fruit on the side!

Notes

Adjust the batter with additional milk for desired thickness. Enjoy with various toppings like fruits or nut butter.
