A refreshing and creamy twist on classic potato salad featuring tender baby potatoes, Greek yogurt, and crunchy vegetables.

Ingredients

  • 2 pounds baby potatoes, halved
  • 1/2 cup plain Greek yogurt
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1/4 cup chopped green onions
  • 1/4 cup chopped celery
  • 1/4 cup chopped bell pepper
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Boil the potatoes in a large pot of salted water until tender, about 10-15 minutes. Drain and let cool.
  2. Prepare the dressing by mixing the Greek yogurt, Dijon mustard, and apple cider vinegar until smooth.
  3. Combine the cooled potatoes, green onions, celery, and bell pepper with the dressing. Toss gently to combine.
