A nutritious and hearty quinoa lentil bake packed with flavors and perfect for family dinners or meal prep.

  • 2 cups vegetable broth (or water)
  • 1 cup green or brown lentils
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 6 cups fresh baby spinach
  • 2 large eggs
  • 1 cup feta cheese, crumbled (optional)
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon turmeric
  • Salt and freshly ground black pepper to taste
  • 1/2 cup shredded mozzarella cheese (optional)
  • 1/2 cup grated Parmesan cheese (optional)
  • 1/2 cup grated Gruyere cheese (optional)
  • 2 tablespoons nutritional yeast (for dairy-free option)

Instructions

  1. Rinse and Cook the Quinoa: Rinse the quinoa under cold running water and cook according to package instructions.
  2. Prepare the Lentils: Cook the lentils in vegetable broth until tender, about 20-25 minutes.
  3. Sauté the Garlic and Onion: Dice onion and mince garlic, then sauté in olive oil over medium heat.
  4. Wilt the Spinach: Add spinach in batches and wilt, then remove and squeeze out excess water.
  5. Cook the Onion: Sauté the diced onion until translucent and softened.
  6. Incorporate the Garlic: Add minced garlic and cook until fragrant.
  7. Mix the Ingredients: In a large bowl, combine cooked quinoa, lentils, wilted spinach, and sautéed onion and garlic.
  8. Add Eggs and Cheese: Stir in eggs and cheese or nutritional yeast.
  9. Preheat and Prepare the Oven: Preheat oven to 180°C (350°F) and grease a baking dish.
  10. Transfer the Mixture to Baking Dish: Spread the mixture evenly into the prepared dish.
  11. Add Toppings: Sprinkle any optional cheese on top.
  12. Bake: Bake for 25-30 minutes until heated through and golden brown.
  13. Rest and Serve: Let the bake rest for 5-10 minutes before serving.
