Healthy Zucchini Corn Fritters

Delicious zucchini corn fritters that are crispy on the outside and tender on the inside, perfect for a summer snack or appetizer.

Ingredients

  • 2 medium zucchinis, grated
  • 1 cup corn kernels (fresh or frozen)
  • 1/2 cup all-purpose flour (or gluten-free flour)
  • 1/4 cup grated Parmesan cheese (optional)
  • 2 large eggs, beaten
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  1. Combine the grated zucchini, corn, flour, Parmesan cheese, eggs, garlic powder, onion powder, salt, and pepper in a large bowl.
  2. Heat a little olive oil in a skillet over medium heat.
  3. Scoop spoonfuls of the mixture and flatten them slightly in the skillet.
  4. Cook each fritter for about 3-4 minutes on each side, or until golden brown.
  5. Drain excess oil on paper towels.
  6. Serve warm with your favorite dipping sauce or enjoy as is.

Notes

Squeeze excess moisture from zucchini for the best texture. These fritters can also be baked at 400°F (200°C) for about 20 minutes if preferred.
