Delightful, bite-sized egg bites rich in protein and packed with fresh vegetables, perfect for a quick breakfast or snack.

  • 1 cup fresh spinach, chopped
  • 1 bell pepper, diced
  • Salt and pepper to taste
  • Optional: shredded cheese for topping

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Whisk together the eggs and cottage cheese until well combined.
  3. Add the chopped spinach and diced bell pepper.
  4. Season with salt and pepper to taste.
  5. Prepare a greased muffin tin and pour the egg mixture into the cups.
  6. Optional: Sprinkle shredded cheese on top.
  7. Bake for 20-25 minutes, or until set and lightly golden.
  8. Cool for a few minutes before removing from the tin.
