Delightful and fluffy cinnamon muffins, perfect for breakfast or as an afternoon snack.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin.
  2. Whisk together the flour, sugar, baking powder, salt, and cinnamon in a large bowl.
  3. Combine the melted butter, milk, eggs, and vanilla extract in another bowl.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fill the muffin cups about two-thirds full with batter.
  6. Bake for 15-20 minutes, or until a toothpick comes out clean.
  7. Let cool for a few minutes before transferring the muffins to a wire rack.

Notes

Enjoy warm with butter or honey. Store leftovers in an airtight container for up to 3 days.
