  • 3 tbsp Olive oil
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 1 tsp Garlic powder
  • Fresh herbs (optional, e.g., rosemary or thyme)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Peel and cut the potatoes into even-sized chunks.
  3. Parboil the potatoes in salted water for about 10 minutes, then drain and let them sit to steam dry.
