A flavorful homemade doner kebab recipe inspired by the streets of Istanbul, featuring tender beef marinated in spices and fresh vegetables wrapped in warm flatbreads.

  • 500g beef (thinly sliced or minced)
  • 2 tsp cumin
  • 2 tsp smoked paprika
  • 1 tsp turmeric
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp black pepper
  • 2 tbsp olive oil
  • 1 red onion (thinly sliced)
  • 1 red bell pepper (sliced)
  • 1 yellow bell pepper (sliced)
  • 4 flatbreads or pita
  • Fresh parsley (chopped)
  • Garlic yogurt sauce for serving

Instructions

  1. Combine the cumin, smoked paprika, turmeric, garlic powder, onion powder, black pepper, and olive oil into a thick spice paste that will coat your beef beautifully.
  2. Coat the beef thoroughly in the spice paste, ensuring every piece is well-covered. Let it marinate for at least 20 minutes.
  3. Preheat your oven to 220°C (428°F). Place the marinated beef on a rack and roast for 35-40 minutes until it’s deeply caramelized, turning halfway through.
  4. Let the beef rest for 5 minutes to allow the juices to redistribute.
  5. Slice the rested beef thinly for easier assembly.
  6. Warm the flatbreads for about 30 seconds per side until they’re soft and slightly charred.
  7. Layer the sliced beef over the warm flatbread, top with red onion, bell peppers, and a sprinkle of fresh parsley. Drizzle with garlic yogurt sauce before serving!

Notes

Marinate the beef overnight for deeper flavor. You can also use chicken or turkey instead of beef.
