A delightful and versatile homemade lemon curd that’s perfect for spreading on toast, pancakes, or enjoying by the spoonful.

Ingredients

  • 4 large eggs
  • 1 cup granulated sugar
  • 1/2 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/2 cup unsalted butter

Instructions

  1. Whisk together the eggs, sugar, lemon juice, and lemon zest in a saucepan until well combined.
  2. Cook over medium heat, stirring constantly until it thickens enough to coat the back of a spoon, about 8-10 minutes.
  3. Incorporate the butter off the heat until melted and smooth.
  4. Cool the lemon curd in a bowl to room temperature.
  5. Chill in the refrigerator until set for about 2 hours.

Notes

Can be used as a scone spread, cake filler, or yogurt mixer. Store in an airtight container in the refrigerator for up to 2 weeks or freeze for up to 3 months.
