These crispy, caramelized Brussels sprouts are transformed with a sweet and tangy honey balsamic glaze, turning a misunderstood vegetable into a star dish.

  • 1 lb Brussels sprouts (trimmed and halved)
  • 2 tbsp olive oil
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper (freshly ground)
  • 1/4 tsp garlic powder
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss the halved Brussels sprouts with olive oil, salt, pepper, and garlic powder until they are evenly coated.
  3. Arrange the sprouts in a single layer, cut-side down, on a large baking sheet.
  4. Roast for 20-25 minutes, until the sprouts are tender and the edges are dark and crispy.
  5. Whisk together the balsamic vinegar and honey in a small bowl.
  6. Remove the sprouts from the oven and drizzle with the honey balsamic mixture, tossing to coat evenly.
  7. Serve warm and enjoy!

Notes

Add some chopped bacon or pancetta while roasting for an extra burst of flavor. Replace honey with maple syrup for a vegan-friendly version.
