  • 1.5 lbs boneless skinless chicken thighs (Pounded to an even thickness.)
  • 1 tbsp olive oil (For grilling.)
  • 1 tsp kosher salt
  • 0.5 tsp black pepper
  • 0.33 cup honey
  • 2 tbsp chipotle peppers in adobo (Finely chopped.)
  • 0.25 cup ketchup
  • 6 whole soft brioche slider buns
  • 2 tbsp unsalted butter (For toasting buns.)
  • 1 cup shredded green cabbage
  • 0.5 cup purple cabbage (Thinly sliced.)
  • 0.5 cup shredded carrots
  • 0.25 cup mayonnaise
  • 1 tbsp apple cider vinegar
  • 1 tsp sugar
  • 0.25 cup mayonnaise
  • 2 tbsp sour cream
  • 1 tbsp milk
  • 2 cloves garlic (Minced.)

Instructions

  1. Prepare the Chicken: Pound the chicken thighs to an even thickness, then season with kosher salt and black pepper.
  2. Make the Honey Chipotle Sauce: Mix honey, chipotle peppers, and ketchup in a bowl until combined.
  3. Grill the Chicken: Heat olive oil on a grill, cook chicken thighs for 4-5 minutes on each side, brushing with the honey chipotle sauce.
  4. Toast the Buns: Melt butter, split brioche slider buns, and toast them cut-side down until golden brown.
  5. Prepare the Slaw: Combine green cabbage, purple cabbage, and carrots. In a smaller bowl, whisk together mayonnaise, vinegar, sugar, minced garlic, sour cream, and milk, then combine with cabbage.
  6. Assemble the Sliders: Slice grilled chicken, layer on toasted buns with slaw, and top with the other half of the bun.
  7. Serve and Enjoy!: Serve the sliders warm with sides of sweet potato fries or chips.
