Ingredients

Scale
  • 4 fillets salmon (6 ounces each)
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 2 teaspoons Dijon mustard
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • To taste salt
  • To taste pepper
  • 2 ripe peaches (diced)
  • 1/2 red onion (finely chopped)
  • 1/2 red bell pepper (diced)
  • 1 tablespoon lime juice
  • 1 tablespoon cilantro (chopped)
  • 1/2 cup sour cream
  • 1 tablespoon chipotle in adobo sauce (minced)
  • 1 tablespoon lime juice
  • 4 cups cooked rice (white, brown, or quinoa)
  • Optional lime wedges (for serving)

Instructions

  1. Preheat the oven to 400°F (200°C) or prepare a grill over medium-high heat.
  2. Whisk together honey, soy sauce, Dijon mustard, olive oil, garlic powder, salt, and pepper in a small mixing bowl.
  3. Place the salmon fillets on a baking sheet lined with parchment paper or on the grill. Brush evenly with the honey glaze.
  4. Bake for 12-15 minutes or grill for about 6-8 minutes per side, until cooked through.
  5. Combine diced peaches, red onion, red bell pepper, lime juice, chopped cilantro, and salt in a mixing bowl for the peach salsa.
  6. Mix sour cream, minced chipotle, lime juice, and salt in another bowl to create the chipotle sauce.
  7. Assemble the bowls with a scoop of cooked rice at the bottom, topped with salmon, peach salsa, and chipotle sauce.
  8. Serve immediately with lime wedges, if desired.

Notes

Use fresh, ripe peaches for the best flavor. Adjust the chipotle sauce to fit your heat preference.
