Delicate and light Swedish pancakes topped with powdered sugar and lingonberry sauce, perfect for a cozy brunch.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 2 cups milk
  • 3 large eggs
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Butter for cooking
  • Powdered sugar for serving
  • Lingonberry sauce or other toppings

Instructions

  1. Blend the batter: In a blender, combine flour, milk, eggs, sugar, vanilla extract, and salt. Blend until smooth, creating a silky batter.
  2. Heat the skillet: Heat a skillet over medium heat and melt a small amount of butter to coat the bottom.
  3. Pour & swirl the batter: Pour a small amount of batter into the skillet, swirling it around to coat the bottom evenly.
  4. Cook until golden: Cook until the edges are set and the bottom is lightly golden, about 1-2 minutes.
  5. Flip the pancake: Gently flip the pancake using a spatula, cooking the other side for another minute.
  6. Repeat with the remaining batter: Add more butter to the skillet as needed, keeping the cooked pancakes warm on a plate.
  7. Serve & enjoy: Serve warm with a dusting of powdered sugar, lingonberry sauce, or your favorite toppings.

Notes

Ensure your skillet is properly preheated to avoid sticking. Experiment with toppings for variety.
