A vibrant Mexican breakfast dish featuring sunny-side-up eggs, refried beans, and salsa on warm corn tortillas.

Ingredients

  • Corn tortillas
  • Eggs
  • Refried beans
  • Tomato sauce or salsa
  • Avocado
  • Cilantro
  • Onion
  • Cheese (optional)
  • Salt and pepper to taste

Instructions

  1. Warm the tortillas in a skillet until they’re warm and pliable.
  2. Fry the eggs to your desired doneness in a separate pan.
  3. Spread a generous layer of refried beans on each tortilla.
  4. Add the fried egg on top of the beans.
  5. Spoon your homemade salsa over the egg.
  6. Garnish with fresh avocado slices, cilantro, and diced onion.
  7. Sprinkle cheese on top and season with salt and pepper to taste.
  8. Serve immediately and enjoy!

Notes

For a vegan version, replace eggs with scrambled tofu and omit cheese.
