  • 4 boneless, skinless chicken breasts (about 6 oz each)
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 2 shallots (finely minced)
  • 3 cloves garlic (minced)
  • 1/3 cup Irish whiskey
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper (or to taste)
  • 2 tablespoons fresh parsley (chopped, for garnish)

Instructions

  1. Prepare the chicken by patting it dry and seasoning with salt, pepper, and garlic powder.
  2. Sear the chicken in a skillet with olive oil and butter for 5-7 minutes on each side until cooked through.
  3. Sauté the minced shallots in the skillet for 2 minutes until softened.
  4. Add the minced garlic and cook for another minute until fragrant.
  5. Deglaze the pan with Irish whiskey, simmering for 1-2 minutes.
  6. Stir in chicken broth and heavy cream.
  7. Simmer the sauce for 5-7 minutes until slightly thickened.
  8. Combine the chicken with the sauce and let it heat through for 1-2 minutes.
  9. Garnish with fresh parsley and serve immediately.
