A vibrant and fresh Italian Chopped Salad made with colorful vegetables, mozzarella, and a delightful red wine vinegar dressing.

Ingredients

  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, diced
  • 1 bell pepper, diced
  • 1 cup Kalamata olives, pitted and halved
  • 1 cup mozzarella balls, halved
  • 1/4 cup fresh basil, chopped
  • 1/4 cup red wine vinegar
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions
