A delightful homemade bread infused with Italian herbs and layers of gooey cheese, perfect for sharing and enjoying warm.

  • 3½ cups all-purpose flour
  • 2¼ teaspoons active dry yeast (1 packet)
  • 1 tablespoon sugar
  • 1½ teaspoons salt
  • 1 cup warm water (110°F)
  • 3 tablespoons olive oil
  • 4 tablespoons butter (softened)
  • 3 cloves garlic (minced)
  • 1½ tablespoons dried Italian herb blend
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 tablespoons fresh parsley (chopped)

Instructions

  1. Activate the yeast: In a large bowl, combine warm water, sugar, and yeast. Let sit for 5 minutes until foamy, then add olive oil, 3 cups flour, and salt. Mix until a shaggy dough forms.
  2. Knead the dough: Transfer the dough to a floured surface and knead for 6-8 minutes until smooth and elastic, adding the remaining flour as needed to maintain a workable dough.
  3. Let the dough rise: Place the kneaded dough in an oiled bowl, cover with a cloth, and let it rise for 1 hour until it has doubled in size.
  4. Prepare the herb butter: Meanwhile, mix the softened butter with minced garlic and dried Italian herbs to create a fragrant herb butter.
  5. Shape the dough: Roll the risen dough into a 12×18 inch rectangle. Generously spread the herb butter over the surface and sprinkle with shredded mozzarella, grated Parmesan, and chopped parsley.
  6. Roll and seal: Starting from the long side, roll the dough tightly, pinching the seam to seal it securely. Place the rolled dough into a greased 9×5-inch loaf pan. Allow it to rise for another 30-45 minutes until it has puffed up again.
  7. Bake the bread: Preheat your oven to 375°F and bake the loaf for 30-35 minutes, or until the top is golden brown and the bread sounds hollow when tapped.

This bread pairs well with marinara sauce, roasted vegetables, or as part of an antipasto platter.
