A vibrant Italian pasta salad bursting with fresh flavors, perfect for summer gatherings.

Ingredients

  • 8 ounces pasta (penne, rotini, or bowtie)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, diced
  • 1/2 cup black olives, sliced
  • 1 cup mozzarella cheese, cubed
  • 1/4 cup fresh basil, chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to the package directions. Once it’s perfectly al dente, drain it and allow it to cool.
  2. Combine the cooled pasta with halved cherry tomatoes, diced cucumber, diced red onion, sliced black olives, cubed mozzarella, and freshly chopped basil in a large bowl.
  3. Whisk together the olive oil, red wine vinegar, Italian seasoning, salt, and pepper in a separate small bowl.
  4. Pour the dressing over the pasta salad and toss to combine thoroughly.
  5. Chill the pasta salad in the refrigerator for at least 30 minutes before serving.

Notes

For optimal freshness, wait to add the dressing until just before serving. Customize with additional vegetables or proteins as desired.
