  • 8 oz bow tie pasta
  • 1 lb Italian sausage, casings removed
  • 1 cup bell peppers, chopped
  • 1 cup zucchini, chopped
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Parmesan cheese, for serving

Instructions

  1. Cook the pasta in a large pot of boiling salted water according to package instructions until al dente. Drain and set aside.
  2. Heat the olive oil in a large skillet over medium heat.
  3. Brown the Italian sausage, breaking it into small pieces, until fully cooked.
  4. Sauté the bell peppers, zucchini, and minced garlic until vegetables are tender, about 5 minutes.
  5. Add the diced tomatoes and Italian seasoning, and let the mixture simmer for about 5 minutes.
  6. Combine the cooked pasta with the skillet mixture, mixing well to coat the pasta.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with freshly grated Parmesan cheese.

Notes

You can substitute Italian sausage with turkey sausage or plant-based sausage for a lighter or vegetarian option. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
