A fluffy, caramelized pineapple upside-down cake that is easy to make and perfect for any occasion.

  • 1 cup packed brown sugar
  • 1 can (20 oz) sliced pineapples, drained
  • 8 pieces maraschino cherries (optional)
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Melt the butter in a medium saucepan over medium heat. Add the brown sugar and stir until well-combined.
  3. Pour the butter-brown sugar mixture into the bottom of the cake pan.
  4. Arrange the drained pineapple slices evenly over the mixture.
  5. Combine the flour, granulated sugar, baking powder, and salt in a mixing bowl.
  6. Whisk together the milk, eggs, vanilla extract, and melted butter in another bowl.
  7. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  8. Pour the cake batter evenly over the pineapple layer in the cake pan.
  9. Bake in the preheated oven for 35-40 minutes.
  10. Cool the cake in the pan for about 10 minutes before inverting onto a serving plate.

Notes

Serve with vanilla ice cream or whipped cream for an extra treat. For tropical flavor, consider coconut cream.
