Deliciously nutty and keto-friendly pecan squares that satisfy your sweet tooth without breaking your diet.

  • 1 ½ cups almond flour
  • 1/4 cup unsweetened cocoa powder
  • 1/3 cup granulated erythritol or preferred keto sweetener
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 ½ cups pecans, roughly chopped
  • 1/2 cup sugar-free maple syrup or keto-friendly syrup
  • 2 tablespoons heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9-inch square baking pan or line it with parchment paper for easy removal.
  2. Combine the almond flour, cocoa powder, erythritol, and salt in a large mixing bowl. Mix well to ensure there are no clumps.
  3. Add the melted butter, egg, and vanilla extract to the dry ingredients. Stir until the mixture is thoroughly combined and forms a dough.
  4. Press the dough evenly into the bottom of the prepared baking pan to create the crust layer. Use the back of a spatula or your hands for an even base.
  5. Bake the crust in the preheated oven for 12-15 minutes, or until lightly golden. Remove from the oven and set aside to cool slightly.
  6. Combine the chopped pecans, sugar-free maple syrup, heavy cream, and a pinch of salt in a separate bowl. Mix until the pecans are evenly coated.
  7. Pour the pecan mixture over the cooled crust, spreading it evenly. Return the pan to the oven and bake for an additional 15-20 minutes, or until the pecans are lightly toasted and the topping is set.
  8. Let it cool in the pan for at least 30 minutes before cutting into squares. Chill before serving for best results.

Notes

For added flavor, consider a pinch of cinnamon. Store leftovers in an airtight container for up to a week or freeze for up to three months.
