  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup sugar
  • 1/2 cup unsalted butter, melted
  • 4 large egg yolks
  • 1 can (14 oz) sweetened condensed milk
  • 1/2 cup key lime juice
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • Lime slices for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine graham cracker crumbs, sugar, and melted butter in a mixing bowl. Press the mixture into the bottom and up the sides of a 9-inch pie plate.
  3. Bake the crust for 8-10 minutes or until golden brown. Remove from the oven and let it cool.
  4. Whisk together the egg yolks, sweetened condensed milk, and key lime juice until smooth. Pour the mixture into the cooled pie crust.
  5. Bake the pie for an additional 15 minutes.
  6. Cool the pie to room temperature, then refrigerate for at least 3 hours.
  7. Whip the heavy cream with powdered sugar until soft peaks form, then spread it over the pie.
  8. Garnish with lime slices and serve chilled.

Notes

Use fresh key limes for the best flavor. Let the pie set completely before serving. Whip the cream just before serving for freshness.
