Korean Beef Tacos

A delightful fusion of Korean flavors and classic tacos, filled with savory beef and fresh toppings.

Ingredients

  • 1 lb ground beef
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 tablespoon sesame oil
  • 1 teaspoon red pepper flakes (optional)
  • 8 small corn or flour tortillas
  • 1 cup shredded carrots
  • 1 cup sliced cucumbers
  • 1/2 cup chopped green onions
  • 2 tablespoons cilantro, chopped
  • Sriracha or other hot sauce (for serving)

Instructions

  1. In a skillet over medium heat, cook the ground beef until it’s nicely browned.
  2. Add in the soy sauce, brown sugar, minced garlic, grated ginger, sesame oil, and the red pepper flakes. Stir the mixture and let it cook for another 3-4 minutes.
  3. While the beef is cooking, warm the tortillas in another skillet or microwave.
  4. Take each tortilla and pile on some of the delicious beef mixture. Top with shredded carrots, cucumber slices, green onions, and cilantro.
  5. Drizzle your tacos with Sriracha or your favorite hot sauce for an extra kick!

Notes

For added flavor, serve with kimchi or a cucumber salad. Store leftovers in an airtight container in the fridge for up to three days.
