A delightful twist on traditional Korean Beef Bulgogi, featuring marinated beef, colorful vegetables, and creamy guacamole served over rice.

  • 1 lb beef (thinly sliced)
  • 1 cup rice (cooked)
  • 1 cup mixed vegetables (like bell peppers, carrots, and broccoli)
  • ½ cup soy sauce
  • 2 tbsp sugar
  • 2 tbsp sesame oil
  • 3 cloves garlic (minced)
  • 2 green onions (sliced)
  • 1 tbsp sesame seeds
  • 1 avocado (for guacamole)
  • Salt and pepper to taste

Instructions

  1. Marinate the Beef: In a bowl, mix together the soy sauce, sugar, sesame oil, and minced garlic. Add the sliced beef to the mixture and marinate for at least 30 minutes.
  2. Cook the Rice: Prepare the rice according to the package instructions.
  3. Sauté the Beef: In a skillet, heat a bit of oil over medium heat. Add the marinated beef and cook until browned, about 5-7 minutes.
  4. Stir-Fry the Vegetables: Add the mixed vegetables to the skillet with the beef and stir-fry for another 3-5 minutes.
  5. Make the Guacamole: Mash the avocado in a bowl and season with salt and pepper.
  6. Assemble Your Bowl: Serve the beef and vegetable mixture over rice. Top with guacamole, sliced green onions, and sesame seeds.
