A comforting lamb curry with aromatic spices and rich coconut milk, perfect for a cozy family dinner.

  • 2 lbs lamb, cut into pieces
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tbsp curry powder
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 can (14 oz) diced tomatoes
  • 1 cup coconut milk
  • 2 tbsp vegetable oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the oil in a large pot over medium heat. Add onions and sauté until they become translucent.
  2. Add the minced garlic and grated ginger, cooking until fragrant.
  3. Add the lamb pieces to the pot, browning them on all sides.
  4. Sprinkle in the curry powder, cumin, and coriander; stir to coat the meat.
  5. Pour in the diced tomatoes and coconut milk, mixing well.
  6. Bring the mixture to a simmer, cover, and reduce heat. Cook for 1.5 to 2 hours.
  7. Once the lamb is tender, season with salt and pepper to taste.
  8. Serve hot, garnished with fresh cilantro.

Notes

Marinating the lamb in yogurt can enhance tenderness. For variations, swap lamb for chicken or chickpeas.
